Easy (and Cheap!) Dinner Ideas for 2

Like most 22 year olds, my dinner ideas come from Pinterest, Buzzfeed or some random video I saw on Facebook. The only qualifications I look for when choosing what to make is: is it easy? is it cheap? and are the ingredients light enough for me to carry home from the store?

The one think I still have to learn to do, is to really make food for JUST 2. I always end up over-making everything, to the point where there are enough leftovers to last a week. And since I've never grown out of the "I hate leftovers" stage, this is a problem.


Here are some easy dinners we made when I wasn't interested in spending too much time in the kitchen:


Burritos

Burritos are such a fun and easy meal to make. I always make them with ground beef that was cooked with onions and taco seasoning, cheddar cheese, corn, scrambled eggs, tomatoes and mexican style kidney beans. We always add a salad or plate of veggies on the side (presented nicely by Daniel) and salsa that me make with tomatoes, onions and a jalapeno pepper. What's fun with burritos is that there really is no 'right' or 'wrong' way to make them, And they can be easily wrapped and freezed for later meals.


Wings and IPA


The EASIEST and CHEAPEST meal by far. Aside from the chicken wings that are dirt cheap, I buy a sauce (sweet chili, teryaki, or whatever) for the wings and I make a side dipping sauce that is usually just mayonnaise and mustard mixed together. Lastly, we pair with beer or try out a new IPA. This meal is SO easy too since all you need to do is mix the wings with the sauce and throw it in the oven for about 40 minutes. And the sauce takes about 30 seconds while setting the table.


Salmon

Anything that just needs a little bit of olive oil and seasonings and is ready to be thrown in the oven until it's ready is great in my book. Salmon is such an easy go to meal, that you can find me preparing it twice a week. I usually choose to season the salmon (alongside carrots, sweet potatoes and peas) with olive oil, salt, pepper, sweet chili pepper, garlic, rosemary and lemon juice. It's awesome with garden salad and a "bed of rice" -- sounds so fancy. It's a meal with little prep and is ready in 45 mins!


Pizza

HOMEMADE PIZZA. Have you done it? Have you experienced it??? It's amazing. I'm a huge fan of pizza in general, but our homemade pizza somehow takes the cake. The dough is so easy, consisting of just flour, baking powder, water and salt - it is ready in like an hour or two for FOUR pizzas. Then you can make or buy pizza sauce and then top with whateveerrr you want. If you want an 8 cheese pizza, do it. Pineapple? Disgusting, but whatever gets your saliva glands pumping. You can literally do whatever you want. And depending on how good your sauce is, it has a 10/10 chance of being the best pizza, ever. Not only is it delicious but it is way cheaper than ordering out (in the long run and considering your not ordering Little Caesar's).
